This community service program aimed to utilize dragon fruit as a local food resource by developing dragon fruit pudding as an alternative form of Supplementary Feeding (Pemberian Makanan Tambahan/PMT) for children, particularly when surplus harvests are difficult to market. The program employed a Participatory Action Research (PAR) approach comprising four stages (to know, to plan, to act, and to reflect/change) and involved farmers, mothers, Posyandu cadres, and community members in Plampangrejo Village, Cluring District, Banyuwangi Regency. Data were collected through observation, interviews, discussions, documentation, and participant evaluation, and were analyzed descriptively and qualitatively. Through education, demonstrations, hands-on practice, and mentoring, participants gained knowledge of alternative uses of dragon fruit and practical skills in processing it into pudding using simple household equipment. The PAR approach encouraged active community participation in identifying problems, planning solutions, implementing actions, and reflecting on the results. The program also added value to dragon fruit that could not be absorbed by the market. However, since changes in children’s nutritional status were not measured, dragon fruit pudding is positioned as one alternative PMT rather than the sole source of children’s nutrition.
